Today’s delicious recipe is one of the most easy and versatile recipes of all time, it’s apple crisp! When I first discovered apple crisp, I am embarrassed to say that I made it very often,  multiple times a week often, shhhh. It’s so delicious and easy I made single servings, couple servings and a large family sized serving and it was delicious and perfect every single time!

This basic recipe was found at Iowa Girl Eats, she makes some of the easiest and most delicious recipes!

I change it a little bit every time I make it: Usually I make double the crisp and add extra cinnamon, sometimes I add toffee, sometimes I add other delicious fruits, such as peaches or pears. There are just so many options with apple crisp!

Apple Crisp

Serves 1

This recipe was adapted from Iowa Girl Eats.

1 small apple

1/8 teaspoon each flour, sugar & cinnamon

1 Tablespoon brown sugar

1 Tablespoon old fashioned oats

1 1/2 teaspoons flour

1 1/2 teaspoons cold butter

Directions:

1. Preheat oven to 375 degrees. Peel then chop apple into small, 1/4″ cubes. Toss with flour, sugar and cinnamon in a small bowl, then pour into a non-stick sprayed, individual-sized baking dish.

2. In the same bowl combine brown sugar, oats, flour, and cold butter. Smush with your fingers until butter is well distributed among the ingredients. Top apples with the mixture and bake for 15 minutes, or until crisp is golden brown (Depending on how cooked you like your apples you may have to adjust your cooking time). Add ice cream and enjoy!

Simple. Easy. Delicious!

This is incredibly simple all you do is:

#1. Find some nicely shaped jars.

#2. Add a bit of paint to the bottom.

#3. Swirl.

#4. Turn upside down until completely dry.

#4. Repeat steps 2-4 until the opacity is just as you’d like.

After they are completely dry you can add flame-less candle for a lovely glow or leave them on a windowsill to catch the light though out the day!

My goal is to live a happy and healthy life. I think a big part of that is being part of something bigger than myself. Everyone has a thousand different things that they are apart of: a work  community, a blogging community, a fitness community, etc. and I am dedicating Friday’s to explore different things that anyone can all be apart of. Today’s post will be about a really fun and fantastic run. Now I would not consider myself an avid runner, but I absolutely love races! Here are a few reasons why:

#1. They are great for every single  fitness level.

#2. They usually benefit a fantastic organization.

#3. They give you something fun to be apart of.

This phenomenal race is called the Color Run!

This race benefits local communities and charities in the cities that participate in the run. They use a different color of holi powder to indicate each mile that you have completed and a big holi powder explosion when you cross the finish line. There are 20 US cities that will be apart of this unbelievable race! You will be sure to leave happy and pigmented!

Every Thursday I will post an oh so delicious recipe! Today’s recipe comes from Smitten Kitchen. Smitten Kitchen has the most heavenly recipes! This one is a nectarine and blackberry galette. There is something so beautiful and rustic about a free-form pie, and this one couldn’t be easier.

Now, I have made this recipe multiple times and I change it up almost every time I make it. I have so much trouble following recipes, and sometimes that gets me in trouble! However, this galette comes out beautiful and delicious every. single. time. It is perfect for anytime of the year. I prefer to make it when the berries are in season, but sometimes a warm and delicious fresh-baked pie is exactly what you need in the middle of winter.

Blackberry and Nectarine Galette

First start out and make the pâte brisée

this recipe was adapted from Martha Stewart.

2 1/2 cups all-purpose flour
1/4 teaspoon salt
1 tablespoon sugar
1 cup (2 sticks) unsalted butter, chilled and cut into small pieces
1/4 to 1/2 cup ice water

In the bowl of a food processor, combine flour and salt; pulse to combine. Add butter, and pulse until mixture resembles coarse crumbs with some larger pieces remaining, about 10 seconds. (To mix by hand, combine dry ingredients in a large mixing bowl, then cut in butter with a pastry blender.)

With machine running, add ice water through feed tube in a slow, steady stream, just until dough holds together without being wet or sticky. Do not process more than 30 seconds. Test by squeezing a small amount of dough together; if it is still too crumbly, add a bit more water, 1 tablespoon at a time.

Turn out dough onto a clean work surface. Divide in half, and place each half on a piece of plastic wrap. Shape into flattened disks. Wrap in plastic, and refrigerate at least 1 hour or overnight. The dough can be frozen for up to 1 month; thaw overnight in the refrigerator before using.

Blackberry and Nectarine filling,

this recipe was adapted from Bon Appetit, July 2002

Makes one smallish galette,  4 to 6 people (or just one, if you’re me!)

1/2 recipe pâte brisée (above)

1/4 cup sugar
1 1/2 teaspoons cornstarch
3 medium nectarines, each pitted and cut into 16 slices
1/2 pint basket blackberries
1 egg, beaten to blend (for glaze)
Raw or coarse sugar crystals

Any preserves (peach, blackberry, apricot, or whatever you have on hand)

Roll out dough on lightly floured sheet of parchment paper to 12-inch round, turning dough occasionally to prevent sticking. Slide rimless baking sheet under parchment. Transfer dough on parchment to refrigerator. Chill until dough firms slightly, about 30 minutes.

Make filling: Stir sugar and cornstarch in medium bowl to blend. Mix in fruit. Let stand until juices are released, stirring fruit occasionally, about 30 minutes.

Preheat oven to 375°F. Transfer baking sheet with dough to work surface. Let stand 8 minutes to allow dough to soften slightly if too firm to fold. Spoon fruit and juices into center of dough.

Arrange fruit in even 9-inch-diameter layer in center. Brush 2-inch border of dough with egg glaze. Lift about 2 inches of dough border and pinch to form vertical seam. Continue around tart, pinching seam every 2 inches to form standing border. Fold border down over fruit (center 6 inches of fruit remain uncovered). Brush folded border with egg glaze; sprinkle with raw sugar.

Place baking sheet with tart in oven. Bake until crust is golden brown and fruit filling is bubbling at edges, about 55 minutes. Remove from oven; slide large metal spatula under tart to loosen from parchment. Brush fruit with preserves. Slide tart onto rack. Cool 45 minutes. Serve warm or at room temperature with ice cream.
